Ingredients
- 4 skinless, bone-in chicken thighs
- Juice from half of a lemon
- 2 tablespoons Extra Virgin Olive Oil
- salt & pepper
- 2 teaspoons dry thyme
- 2 tablespoons of honey
- 2 tablespoons of dijon mustard
- 2 sliced shallots

Pre-heat oven at 370 F

Prepare chicken thighs in a baking dish and add salt & pepper.

Sear the chicken on both sides in a frying pan on medium heat, around 2 minutes per side, until you get a nice brown color. Then, put the chicken back into the baking dish.

Combine the sauce ingredients in a mixing bowl; the lemon juice, olive oil, thyme, shallots, honey and mustard. Mix well, and pour the mixture over the chicken.

Bake for 35 minutes.
